Coconut Ginger Balls

C OCONUT GINGER BALLS :

1 cup dates
2 tbsp chopped walnuts, cashews or Brazil nuts
3/4 cup unsweetened shredded coconut
2-3 tbsp honey or molasses
2-3 tbsp fresh grated ginger

In a food processor, mix everything up well. Roll and shape into 1 inch balls and refrigerate.
